Goodbye Summer! Hellllloooo Autumn

I love Summer! I will miss Summer but I also love Fall, possibly my favourite season of all even with the cooler nights and shorter days. As a kid, when my birthday rolled around at the end of August, it was a subtle indication that Summer was over, or at least, almost over.  Going back to school didn't help with that either.

So this year I made a birthday cake for myself to share with my friends that tied in a little bit of Fall.  I figure it was time to embrace Fall, after all, it's a beautiful season ... the cooler nights, the changing colours, the harvest, more time with loved ones at home, Halloween ... I only hope it will also bring more time for baking!

Happy Harvest, it's Autumn!

A Birthday Cake for a Great Soccer Dad

For my boyfriend's father's 60th birthday I made him a soccer themed cupcake tower.  They truly are a soccer family, each of the boys having played for years and Mike, taking after his dad, became a goalie.  So a soccer themed cake seemed most fitting.  It was even topped off with a cake soccer ball and a bobble-head look-a-like of the birthday boy ... after all, it's not every day you turn 60!

The cupcakes and cake flavour was vanilla chocolate chip with white and dark chips; all vegan!  The icing, also vegan, is vanilla flavoured dyed green to make the soccer field "grass."

I even went so far as to have us "sign" the cake, that is, I rolled fondant on a few of the cupcakes and with food coloring pens we were each able to sign our name and birthday wishes.

When I saw this soccer cake topper set I just couldn't resist,  I liked the added touch and dimension it brings to the overall tower.  Everyone was delighted by the bobble, loved the cake display and couldn't wait to dig in.  It didn't take long for everyone to enjoy but most importantly, the guest of honor was happy.

Happy 60th Birthday Rick!

Happy Pride Week Rainbow Cupcakes!

It's been a while since I did any creative baking, or any real baking for that matter.  Being away for two months has made it difficult of course, and if there is no occasion to bake then I usually won't.  However, with gay pride this week and the parade coming up this weekend  I thought it would be fun to bake some vanilla cupcakes with a rainbow theme.  Each one topped off with fresh fruit to match every colour from the pride flag.

To all my LGBT friends, happy pride weekend!

Asia Inspired 4: Malaysia

Panda and Tiger - not sure if I will actually get to see any of these, unless at the zoo. I wanted to include a Tiger in this post because it is extremely important to note that the Malayan Tiger is under threats of extinction.  The next time I visit Thailand and/or Malaysia it will be to volunteer on a wildlife habitat.

Asia Inspired 3: Thailand

The flavour description of this cupcake just says Thailand to me - Chocolate Thai Curry cupcake, from Mostly Foodstuffs blog page. Interesting.
