Scarlet's 1st Birthday: Dog Cupcakes

Who says dogs can't have their cupcake and eat it too? This weekend marked my beautiful puppy Scarlet's first birthday.  So to celebrate, I made her doggy cupcakes of course!

Cottage Cheese Corn Dogs
(Original recipe from In the Dog Kitchen: Great Snack Recipes for Your Dog By Julie Van Rosendaal, p. 60-61)

2 cups whole wheat flour
1 cup cornmeal
2 tsp baking powder
1 cup cottage cheese
1 cup chicken broth or buttermilk
1 large egg
1 cup of  your choice: chopped cooked chicken, pork, beef, sardines, fresh blueberries, grated cheese or any other addition your like.  I went with: carrots and brown & wild rice mix

1. Preheat oven to 350F

2. In a large bowl, combine the flour, cornmeal and baking powder.  In a small bowl, stir together the cottage cheese, stock or buttermilk, and egg.

3. Add to the wet ingredients to the dry ingredients and stir just until blended.  At this point you can add any other ingredients such as the chopped meat or berries or vegetable, etc.

4. Spray mini muffin tins with nonstick cooking spray and fill them with batter. Bake for 20 minutes, until the tops are springy to the touch.

5. Remove from the pan and cool on a wire rack.

I top the mini cupcake treats with peanut butter when I give one to her

  2. Hi Natalie, I actually made a batch and shared them with my other dog owner friends to give to their dogs and some of they asked if they could eat them! lol

    We probably could but I personally would not haha :)

  5. many mini cupcakes did u bake with this recipe...can u temme how many regular ones will this bake?? i am looking for about 30 cupcakes for my dogs bday bash.

  6. Hello! Thanks for visiting my blog ... to be honest I don't even recall how many mini ones I made, but from the looks of this recipe I would estimate that it could make about 12-14 regular size cupcakes!!
