Surprise! Banana and Pecans

This week I was a cooking/slash baking machine, add this to the list: Banana Pecan Cupcakes with cream cheese icing (see last weeks blog for recipe link).  They were divine! I of course made them with gluten-free flour, also reduced the amount of sugar to about half especially since bananas are quite sweet when they're ripe and cooked.

Have a BBQ or party this weekend? Then I definitely recommend this recipe.

I also made a few regular sized cupcakes with this batter but added melted semi-sweet chocolate on top and a pecan as a gift to my boxing coach for his birthday.
