Cinnamon! One of my Favourites

What can I say about cinnamon except that it's one of the most amazing spices I've ever used and I love it! It's not only very healthy for you but it's a perfect spice for almost any sweet or savoury dish and for any meal-time, not just breakfast (my mom uses it in her chicken dishes).

Here is one of my (now) most favourite cupcake recipes and icing:

Cinnamon Mini Cupcakes

- 2 cups gluten-free flour mix
- 1.5 tsp baking powder
- 2 tsp ground cinnamon
- Pinch of sea salt
- 1 cup fat free soy milk
- ½ canola oil
- 4 large eggs
- 1 cup light brown sugar
- 2 tsp grated orange peel
- 1 tsp vanilla extract

1. Preheat oven to 350F. Line a couple of mini muffin tips with cupcake liners, set aside.
2. In a medium bowl, mix together the first four ingredients, set aside.
3. In another smaller bowl stir together milk and oil.
4. Using an electric mixer, beat eggs and sugar in a large bowl until thick enough for batter to fall in heavy ribbon when beaters are lifted, about 5 minutes.
5. Beat in orange peel and vanilla.
6. Add flour mixture; beat just until blended. Add milk mixture and beat just until blended.
7. Divide batter between prepared pans.
8. Bake cupcakes until golden brown about 10-12 minutes.
9. Cool cupcakes for 10 minutes then transfer to a cooling rack until completely cooled.
10. Once cooled frost each mini cupcake with cocoa cinnamon cream cheese icing

Cocoa Cream Cheese Icing

- 1 (8 ounce) package of light cream cheese, softened
- 1/4 cup butter, softened
- 1 cup sifted confectioners' sugar
- 1/2 teaspoon vanilla extract
- 2 tsp ground cinnamon
- 2-3 tbsp of cocoa powder

In a medium bowl, using an electric mixer cream together the cream cheese and butter until smooth.  Gradually stir in the confectioners' sugar. Add vanilla.  Mix together well.  Add the cinnamon and cococa powder last just using a spatula to mix together. Store in the refrigerator after use.


  1. Mmm, those look so good, and the icing sounds delicious! Question, though. In the recipe it says 1/24 cup butter...is that supposed to be 1/2 or 1/4? Because I'd really like to make these :3

    Cinnamon is my favourite spice and your cupcakes look so soft, so delicious, spreading their warm, tempting aroma all over the place...

    P.S. Joining SteelCityFlan's request, I would also like to ask you what is the measure unit for the canola oil? Thank you in advance.
