UP inspired New Year's Cupcakes

I love the animated movie UP and have wanted to make UP inspired cupcakes for a while now.  New Years seemed like a great time to do them because the movie has such a wonderful inspiring message I think, perfect for the new year.  Simply, live life with no regrets and appreciate the journey you've taken because every journey is grand in it's own way.

I made about 48 mini vegan carob (like chocolate but not cocoa and without the caffeine) cupcakes for the balloons and mixed 7 different vegan icing colours: green, yellow, blue, red, pink, purple and orange.

A close up shot of the balloons.  I used blue raspberry flavoured shoe-string licorice as the balloon strings.  White would have been ideal but I think the blue worked nicely.

A close up of the house. Made from a regular sized cupcake, covered in white chocolate fondant (not vegan) and then coloured in the house with food colouring pens - I love those freakin' pens!

 Up, up and away ... they didn't last long at the New years party.  I think my boyfriend Mike ate 12 of them alone!

    Just a tip, I actually add icing to the bottoms of the cupcakes to help them stick to the tray, that way they all sit in place and don't slide around. Especially helps if you have to transport them :)

    I got the food colouring at Golda's Kitchen, they are gel best, I find it works best - better then liquid.

    You can order online and they deliver but perhaps only within Canada or North America, not sure.

    Thanks for stopping by!

    For these cupcakes I used butter cream. I make it from scratch and I make mine vegan. I'm not sure if I posted a recipe, here are two options:

    Regular butter cream includes: 3 1/2 cups of icing sugar, 1 cup of butter (or 1/2 cup butter + 1/2 cup shortening), 1 tsp vanilla.

    If you google the recipe I am sure you will get many hits.

    The vegan version I make includes:
    icing sugar, vegan butter, shortening, vanilla, and about 1/4 cup of soy milk; I usually eyeball how much depending on the thickness I want.

    is the icing added inside the paper or outside? I'm guessing inside so it's not messy, but since i'm not a baker I guess i'm asking the dumb question just to be sure I don't mess this up. :) thanks!

    Thanks for visiting for the question. The icing is actually on the outside of the paper. True, it can get messy but I add just a very little bit, that's all it takes to stay in place just long enough to transport :)
