Demystifying Red Velvet the Cupcake

It's loved by many but can only be described by a few, that is, what red velvet cake actually is - What does it taste like, is it chocolate flavour?  Why is it red? What makes it so delicious?

Perhaps it's the mystery or the combination of moist, fluffy cake and cream cheese icing, either way, it's a delight!

I recently made some vegan red velvet cupcakes with vegan cream cheeze icing and they were loved by all.

Why does this little cake make everyone so happy is my question?

According to Wikipedia, red velvet cake by definition is ... a cake with a dark red, bright red or red-brown color, usually prepared as a layer cake with either a vanilla or chocolate flavour, topped with a creamy white icing.

Though traditionally (based on it's history) it is made with buttermilk and loaded with butter I believe making the vegan version you really can not detect the difference.  It's just as fluffy, moist and delicious.

  1. have you ever tried red velvet using beets? it makes the cupcakes super moist without any artificial food dyes! mmmmm...
